vegan mofo :: win bryanna's cookbook, try bryanna's salad


I've been a fan of Bryanna Clark Grogan for years and finally got a chance to meet her and hang out with her at the Vida Vegan Conference. She is a lovely, down-to-earth person and a wealth of information, positivity, and of course, of vegan recipes.

A surplus of CSA share organic carrots inspired me to try a recipe from Bryanna's newest cookbook, World Vegan Feast. Besides being tasty and a whiz to prepare, her Glazed Moroccan Carrot Salad [see below for recipe] also happens to be gluten-free.

Glazed Moroccan Carrot Salad from World Vegan Feast

  • 1 1/2 pounds carrots, peeled and cut into matchsticks
  • Juice of 1 large lemon [about 5 T]
  • 2 T olive oil
  • 2 T minced parsley
  • 1/2 tsp salt
  • 1/2 tsp minced garlic
  • 1/8 tsp paprika
  • 1/8 tsp fresh-ground pepper
  • Garnish: 4-6 strips of Moroccan Preserved Lemon
    or long shreds of organic lemon zest
1. Steam the carrot matchsticks until crisp-tender. Transfer them to a colander and cool them off under cold running water. Drain well.
2. In a small bowl, whisk the lemon juice with the remaining ingredients and then toss with the carrots. Transfer to a serving dish. Garnish with the preserved lemon peel or zest. Serve at room temperature.

I LOVE spanakopita and was thrilled to come upon a convincing vegan version in The Accidental Vegan (Devra Gartenstein).

PS, I can't wait for Celebrate Vegan and I'm so sad its release has been pushed back to November! It'll be worth the wait, though :)

I'm a Panang Curry girl myself. Worked in a Thai place for 4 years though so they all are pretty equal now. Lad Na is also amazing.

Hmm.. favorite food from another country. Not that i've been to Nicaragua, but fried plantains will beat french fries anyyyyyday and always with agave sweetened ketchup!

Dal, daal, dahl, dhal, however you spell it it's positively comforting. Masoor, Urad, Chana, any and all of the different kinds. It's become my favorite comfort food and something I can spend an afternoon stewing or whip up in twenty minutes at my parent's house.

Panuchos from the Yucatan Peninsula of Mexico! It's a corn tortilla spread with refried black beans and fried. Traditionally, it's piled with lettuce, tomato, salsa, avocado, and chicken or turkey marinated in orange juice and achiote - I made a delicious version with veggie-chick'n strips! In Mexico, I just asked for them without chicken/turkey and they were delish.

I'm going to vote for chana masala. Chickpeas do right by so many international cuisines. They're the bean of all trades! But they work as a main course most beautifully in chana masala, scooped up with roti.

I rarely eat Swedish food anymore, it seems so bland and boring compared to, say, Indian, Mexican, Italian, Chinese or even American. So it's hard to choose, all my favorite food come from other countries... I think it's a dead heat between lasagna and mac & cheese! Or is it dal? Or Gallo Pinto with fried plantains ad salsa lizano? Hm...

Wow, that's a really tough question. I think my favourite non-uk food would have to be Paella. I love it but I've never made it for myself, I'm going to be attempting it on my blog tomorrow!

Bean burritos! I know, totally not exciting but as a busy working mother with two kids, bean burritos make my family and therefore me happy! Bean burritos for breakfast, lunch and dinner, doesn't matter! Using homemade refried beans, of course!

I have been on an international kick lately too - i saw this book mentioned on vegan crunk so now that i've seen it twice, i must get it! (sigh, so happy that amazon takes amEx points...)So my favorite is indian food... often it is not vegan, as i'm sure you know, so I often end up making my own. I buy old fashioned falling-apart indian food cookbooks at thrift stores and veganize the recipes. I recently made this fabulous tofu vindaloo... it's coconut-milk based which is odd for indian food but it has all teh yummy indian spices and when you pressure cook tofu in the coconut milk sauce the flavors just become amazing. yummmmmm.

also, i have like 10 carrots at home b/c of an unfulfilled desire to make carrot cake... so maybe i'll be healthier and make this salad!

Tough one because all my favorite foods are Thai, Ethiopian, or Indian. I don't think I can choose just one. How about aloo gobi since it opened up the world of Indian cooking for me.

I had a green mango salad in northern thialand once .. i have tried many recipes but, nothing compares! I am thinking i might have to make a special trip back to get more!

My favourite food growing up was a german dish called kaese spaetzle, a cheesy egg based noodle dish - and thanks to the wonders of the internet & flax seed-as-an-egg, cashews & nutritional yeast, i was able to recreate something similar but vegan :)

I don't remember the exact name of the dish, but it was something with fried bananas from Africa. One time when I was in grade school we had an international day, and different classes were set up as different countries. We would learn about the country then try food from there. I just remember really liking that banana dish.

Hands down, it's gotta be Koshary - an Egyptian street food that is 100% vegan!

It's just lentils, brown rice, tomato sauce, vinegar, fried onions, and hot sauce to taste for way cheap at many stands and little shops throughout Cairo. It's kind of the Egyptian version of beans and rice, and I make it at least once a month for friends and family.

My fave are Italian rice balls...golden and crispy on the outside, all steamy and savory on the inside. Just the most superdelicious, warming, comforting, totally satisfying food on the planet!

It is in New York City, but they will ship items to your door. Check it out, and then make this yummy recipe! I know I will!
