Strawberry Daquiri Sorbet
- 1 cup sugar
- 1 cup water
- 2 pints strawberries, preferably organic, de-stemmed and halved
- 3 T fresh lime juice
- Zest of 2 limes
- 2 T rum
1. Make simple syrup: Bring water and sugar to a boil. Do not stir. Boil under the sugar dissolves. Let cool completely in refrigerator.
2. Pour the simple syrup into a blender or food processor, and add the remaining ingredients. Blend until smooth.
3. Process according to your ice cream maker's direction.
Variation: Add more rum if you want a frozen, slushy-style Strawberry Daquiri.

I hear you about the heat! I live in MA and it was 85 and very humid today. I don't mind the heat after the winter we had here (never-ending snow!) but the humidity....not so much. More weather like this and I will certainly be investing in an ice cream maker so I can make delicious treats such as your strawberry daiquiri sorbet. It looks so refreshing! By the way I am enjoying your first cookbook immensely; I can't wait for the second. I loved the porcini ravioli with your recipe for marinara. Thank you for sharing your culinary expertise : )

I was curious to know what type of sugar you use. A lot of granulated sugars are not vegan as they use bone char to filter them. Thanks!
