roasted red pepper and onion frittata

A frittata is a baked Italian omelet; half-cooked on the stove top and half-cooked in the oven. Tofu lends itself nicely to this vegan version. I recommend making it in a 9-inch, cast-iron pan and serving it with Earth-Balance slathered toast.

Now why haven't I thought of making frittatas? I love 'em with broccoli, mushrooms and spinach. Your looks fabulous and I bet the cast iron skillet makes all the difference.

I can't wait to get your book and try this recipe. I've been looking for a good frittata recipe, and I just haven't found one I like (none have been firm enough to suit my liking, but yours looks just right).

you have just THE cast iron pan I'd like to have and can not find here in France , the frittata looks wonderful.I can not imagine the taste..earth balance, is unknown too here
