thin-mint hot cocoa and so delicious giveaway

DIY Thin-Mint Vegan Hot Cocoa. ALl you need is non-dairy milk [I used So Delicious Vanilla Coconut Milk], a bunch of fresh mint and some cocoa powder [I used Ghirardelli Unsweetened Cocoa ]

Contrast the sunshine to the fact that it snowed last week in Philadelphia. Again. That's several storms in December which is unusual, because in Philly, we usually don't get significant snow until January-February. After running errands, I came home, and hung my snow-soaked coat up to dry. I was chilled to the bone and wanted – no, needed plant-based hot chocolate immediately. I spied a bunch of CSA-share mint had been sitting in my 'fridge for weeks [perfectly preserved by wrapping the stems in a wet paper towel and the placing it in a Ziplock bag]  – and I decided to infuse some So Delicious vanilla coconut milk with fresh mint.

Try it. It's easy, vegan and tastes so fresh. Cool and hot at once – an interesting sensation. And to get you started, So Delicious is giving away two VIP free product coupons to one lucky US reader. Contest is below the photo recipe.

Infuse non-dairy milk with mint by simmering over low heat.
For one person, heat one cup of non-dairy milk over medium along with a healthy bunch of fresh mint – a healthy handful. Bring it to a boil then immediately lower heat and simmer for about 3-5 minutes. Discard the mint [Toss it down the disposal for a minty fresh drain]


Whisk together the mint-infused vegan milk and cocoa powder. And notice my holiday manicure.
Place a healthy teaspoon of cocoa in your mug. Whisk in the mint-infused milk and enjoy. Many non-dairy milks are already pre-sweetened so adding more sugar or agave nectar is probably not necessary, but you can if you want.

My favorite kale recipe: organic ingredients

handful of kale
1/2 to 1 cup water or your favorite milk beverage
2 tablespoons of blueberries
1 tablespoon of strawberries
a bit of ice
1 dose of liquid fish oil
1 fruit (banana, apple,etc.
Natural sweetener if you wish
Place in blender, blend until smooth
