DIY Thin-Mint Vegan Hot Cocoa. ALl you need is non-dairy milk [I used So Delicious Vanilla Coconut Milk], a bunch of fresh mint and some cocoa powder [I used Ghirardelli Unsweetened Cocoa ] |
Contrast the sunshine to the fact that it snowed last week in Philadelphia. Again. That's several storms in December which is unusual, because in Philly, we usually don't get significant snow until January-February. After running errands, I came home, and hung my snow-soaked coat up to dry. I was chilled to the bone and wanted – no, needed plant-based hot chocolate immediately. I spied a bunch of CSA-share mint had been sitting in my 'fridge for weeks [perfectly preserved by wrapping the stems in a wet paper towel and the placing it in a Ziplock bag] – and I decided to infuse some So Delicious vanilla coconut milk with fresh mint.
Try it. It's easy, vegan and tastes so fresh. Cool and hot at once – an interesting sensation. And to get you started, So Delicious is giving away two VIP free product coupons to one lucky US reader. Contest is below the photo recipe.
Infuse non-dairy milk with mint by simmering over low heat. |
