Millet + broccoli + tahini = A more interesting side than mashed potatoes |
Following my Back to Basics theme, it doesn't get any simpler than this – a quickie mashed potato alternative using pantry staples. I love anything with broccoli. The nuttiness of millet complements the smoky tahini, with just a bit of heat from the garlic to liven things up. It's a recipe, yes. But I created it to resurrect two dishes that were already hanging out in my 'fridge, much in line with the reinvention idea on my recent post about "sexying up leftovers."
I like recipes that are versatile, and this one is, thanks to the inherent malleability of millet. You can easily form this mixture into patties. Fry or bake, and voila – from side, to veggie burgers. Enjoy!
Green[ish] Millet Mash-up
- 1 cup dry millet
- 3 cups vegetable broth
- 3 garlic cloves, minced
- About 3 T tahini [Or other favorite nut butter]
- About 2 cups well-steamed broccoli, lightly chopped
In a medium sauce pan, bring broth to a boil. Add millet and garlic, and lower to a simmer. Cook for about 30 minutes or until all the water is absorbed. Stir in the tahini, mix, and then stir in the broccoli. Using a tablespoon, "mash" the millet until smooth.
To serve, scoop out with an ice cream scoop – it increases the "wow" factor.

Oh I like the sound of this a lot! I've never actually had millet but it looks great and the idea of adding broccoli and tahini usually makes anything taste good.
I've never had millet either.(aside from in cereal flakes) I wasn't really sure what to do with it. I just finished a detox cleanse and this would have been an acceptable dish for me to eat. I'm going to print this and give it a whirl.
This is a great & esy tasty millet recipe! Yummm! I will make this & will make a spiced version of this too!
